These are much easier to make and PACKED with protein, vitamins and minerals! Some of the nutrients are lost in dehydration probably a bit, but mostly just the water! As you know schmexie, fresh fruits, vegetables are loaded with essential vitamins and minerals that keep your body healthy. A food dehydrator does not heat the produce to the point of destroying nutrients. When you can foods that are low in acid you must heat it to 240 degrees and high acid foods need to reach 212 degrees to kill all bacteria. At these temperatures the produce looses not only enzymes they also loose nutrients. A food dehydrator dries the product to an internal temperature of 120 degrees. At this low temperature the product retains their nutrients, enzymes and water soluble vitamins and minerals with out cooking the food. Food bacteria can not grow in a dry environment dehydrated foods will not grow mold or spoil. Vitamin A is not lost during the dehydrating process. Vitamin A is lost when foods are exposed to light. So make a dressing out of 1 Red Pepper, 3 TBS of nutritional yeast, 1 cup of presoaked raw walnuts, tumeric powder and some water, Blend well. Massage well into Kale leaves and then place on trays of dehydrator overnite or for 8-10 hours at 118 degrees.

2 tablespoons coconut oil
3 tablespoons dried dill
3 tablespoons nutritional yeast
3 tablespoons raw soy sauce (nama shoyu or tamari)
